14 Wing Greenwood hosted over 400 guests March 20 at the Annapolis Mess for an elaborate gala event marking the 100th anniversary of the Royal Canadian Air Force in 2024.
The 14 Mission Support Squadron’s Replenishment Flight members worked behind the scenes of the event for several months, despite their unit’s short-staffing.
With a menu including sushi, chocolate fountains, a selection of canapés, beef and chicken stations, an oyster bar, a three-tiered RCAF100-decorated cake, charcuterie, assorted sorbets and hot dishes; highlighting seafood, cheeses, meats and spices, and considering vegan and vegetarian options; AND the stand-up, mingling atmosphere of the event; months of extra work went into preparing the elevated menu. Every military cook in Greenwood was required to work all day and all night to support hosting the gala. All the food, except for the sushi, was crafted by hand in the days leading up to the gala.
The major event, with all its budget, planning, scheduling, kitchen space, and cooks’ skill and availability; was all outside Replenishment Flight’s daily operations running the Annapolis Café for base personnel, and flight feeding.
“I’m super proud of the entire team for going above and beyond for our part of the RCAF100 celebration,” says Lieutenant Katherine Bruce, Replenishment Flight. “The gala pushed our members to create a menu that was elevated far beyond our daily feeding menu, and inspired our members to get creative with food that truly was culinary art.”
